Biyyapindi Chekkalu (Savory Rice Cracker)

Ingredients:

Biyyapindi Chekkalu (Savory Rice Cracker)

  • 1/2 cup chopped onion
  • 3 serrano chilies
  • 1 1/2 teaspoon ginger paste (available in produce section)
  • 1 1/2 teaspoon garlic paste (available in produce section)
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped curry leaves, available at Indian specialty stores
  • 2 cups rice flour
  • 1 tablespoon sesame seeds
  • 1 tablespoon red chili powder
  • 2 tablespoons crushed roasted peanuts
  • 1 teaspoon ground turmeric
  • 4 tablespoons presoaked (for at least 2 hours) chickpeas, roughly chopped
  • Salt to taste
  • Vegetable oil for frying

Directions:

  1. In a blender, combine onion, chilies, ginger, garlic, cilantro, and curry leaves.
  2. Blend to a fine paste.
  3. In a large bowl, combine flour, sesame seeds, chili powder, peanuts, turmeric, chickpeas and salt to taste.
  4. Add paste to dry mixture, knead with hands to form a tight dry dough.
  5. Add a few drops of water to bind ingredients if necessary.
  6. Form a small ball of dough in your hand and press to flatten.
  7. The edges should crack and be uneven.
  8. Repeat with remaining dough.
  9. Heat oil in a deep frying pan over medium-heat.
  10. Fry dough in small batches until golden brown.
  11. Drain and serve.

Makes 20 servings (30 grams per serving).
