Black Beans and Rice, Local-Style

Ingredients:

Black Beans and Rice, Local-Style

  • 1 cup dried black beans
  • Water
  • 2 dried bay leaves
  • 2 cloves garlic, chopped
  • 1/2 teaspoon Cajun seasoning
  • 1/4 to 1/2 teaspoon red pepper flakes
  • 1/4 to 1/2 teaspoon chili powder
  • 1/4 teaspoon liquid smoke
  • Hot cooked rice

Directions:

  1. Sort and discard broken beans; rinse well.
  2. Cover with an inch of water and soak for 2 hours or overnight.
  3. Drain and rinse beans, place in a crockery cooker or saucepan; add water to cover.
  4. Add bay leaves, garlic, Cajun seasoning, red pepper, chili powder, and liquid smoke.
  5. Simmer 4 hours or until beans are soft.
  6. Serve over hot rice.

Makes 4 servings.
