Bok Choy Soup

Ingredients:

Bok Choy Soup

  • 2 tablespoons olive oil
  • 1 pound ground pork
  • 1 teaspoon minced garlic
  • 2 tablespoons sliced ginger
  • 2 quarts chicken broth
  • 1 head bok choy, chopped
  • Salt and pepper to taste

Directions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add pork, garlic and ginger and stir until pork is cooked through.
  3. Add chicken broth and bring to a boil.
  4. Reduce heat; add chopped bok choy and heat until greens are wilted.
  5. Season with salt and pepper.

Makes 6 servings.

Bok choy, or Chinese white cabbage is a vegetable most associated with Chinese cuisine. It's low in calories but high in nutrients and considered a green superfood. You can cook or eat raw.
