Broccoli and Nut Salad with Honey-Mustard Dressing

Ingredients:

Broccoli and Nut Salad with Honey-Mustard Dressing

  • 1 cup light mayonnaise
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 6 cups broccoli florets
  • 1 small red onion, thinly sliced
  • 2 medium carrots, grated
  • 1 cup golden raisins
  • 1 cup dry-roasted peanuts
  • 1/2 cup sunflower seeds
  • 1/2 cup imitation bacon bits

Directions:

  1. In a small bowl, combine the mayonnaise, honey, mustard, lemon juice, salt and pepper.
  2. Cover and refrigerate.
  3. In a large bowl, combine the remaining ingredients.
  4. Add dressing then toss lightly.
  5. Serve immediately.

Makes 6 servings.
