Broccoli Salad with Bacon

Ingredients:

Broccoli Salad with Bacon

  • 1 cup reduced-fat mayonnaise
  • 1/2 cup dried cranberries
  • 3 tablespoons sugar
  • 2 tablespoons vinegar
  • 7 cups broccoli florets, chopped
  • 1/2 cup shelled sunflower seeds
  • 8 slices bacon cooked and crumbled
  • 1/2 cup cheddar cheese

Directions:

  1. In a large bowl combine mayonnaise, cranberries, sugar, and vinegar.
  2. Add broccoli and stir to coat.
  3. Cover and chill in the refrigerator for at least 2 hours or up to 24 hours.
  4. Before serving, stir in sunflower seeds, bacon and cheese.

Serves 10.

Variations: Substitute sunflower seeds with other seeds and nuts, such as pine nuts, chopped pecans, or almonds.
