Bulanglang (Mixed Vegetable Dish)

Ingredients:

Bulanglang (Mixed Vegetable Dish)

  • 1 tablespoon salad oil
  • 3 cloves garlic, chopped
  • 1/2 onion, sliced
  • 1 tomato, diced
  • 1/2 lb roast pork, sliced
  • 1 1/2 teaspoons alamang (fermented shrimp)
  • 1 1/2 lb pumpkin, pared and cubed
  • 2 medium-size long eggplant, sliced
  • 1 cup sliced wing beans
  • 1 cup (2-inch lengths) long beans
  • 1 medium bitter melon, sliced
  • 1/2 bunch kangkong (swamp cabbage), cut into 2-inch lengths
  • 1 cup water
  • Salt to taste

Directions:

  1. In a saucepan, heat oil; sauté garlic and onion.
  2. Add tomato; stir-fry until a sauce forms.
  3. Add roast pork and alamang; sauté for 2 minutes.
  4. Stir in pumpkin, eggplant, wing beans, long beans, bitter melon, and kangkong; cook for about 3 minutes.
  5. Add water; cover and simmer for 10 minutes or until pumpkin is tender, stirring occasionally.
  6. Season with salt.

Serves 6 servings.
