- In a food processor, pulse beet chunks and dates into smaller pieces.
- Add remaining ingredients and process until smooth.
- If mixture is too dry, add a little water.
- Roll into balls and coat with your favorite toppings.
- Place in refrigerator for at least 30 minutes to allow to firm.
Makes about 8 balls.
