Caesar Salad

Ingredients:

Caesar Salad

  • 2 to 3 anchovy filets
  • 4 to 6 cloves garlic, finely chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 2 tablespoons lemon juice
  • 1 to 2 tablespoons mayonnaise
  • 1/2 to 1 cup olive oil
  • Romaine lettuce
  • 1/4 cup freshly shredded Parmesan cheese
  • Freshly ground black pepper
  • Croutons

Directions:

  1. In a bowl, blend anchovy filets, garlic, mustard, and Worcestershire sauce together.
  2. Add vinegar, lemon juice, and mayonnaise; blend well.
  3. Add olive oil to desired consistency.
  4. When ready to serve, put romaine into a salad bowl; add dressing and toss.
  5. Top with cheese, pepper, and croutons.
  6. Serve immediately.

Makes 4 to 6 servings.
