Calamari Salad

Ingredients:

Calamari Salad

  • 1/4 lb whole calamari, cleaned and cut into 1/4-inch rings
  • 1 teaspoon lemon juice
  • 1/8 teaspoon salt
  • Salad oil for frying
  • 1/4 cup cornstarch
  • 1/4 cup flour
  • 2 teaspoons white vinegar
  • 1 teaspoon sesame oil
  • 1 small clove garlic, crushed
  • 3/4 teaspoon soy sauce
  • 1/2 teaspoon grated ginger root
  • 2 teaspoons sriracha (hot red pepper sauce)
  • 1 tablespoon salad oil
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon salt
  • 2 teaspoons honey
  • 1/4 teaspoon sugar
  • 2 cups salad greens

Directions:

  1. Toss calamari with lemon juice and the 1/8 teaspoon salt.
  2. In a wok, heat oil.
  3. Coat calamari with sifted cornstarch and flour mixture.
  4. Fry for 1 minute; drain.
  5. Whip remaining ingredients, except salad greens.
  6. To serve, place salad greens on plates.
  7. Top with calamari.
  8. Drizzle with dressing.

Makes 1 serving.
