Char Siu Fried Rice

Ingredients:

Char Siu Fried Rice

  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 6 slices bacon, chopped
  • 1/4 cup slivered char siu
  • 4 cups cooked rice
  • 1/4 cup minced green onions
  • 1 tablespoon oyster sauce
  • 1 teaspoon low-sodium shoyu
  • Dash of pepper
  • 3 tablespoons chopped Chinese parsley

Directions:

  1. In a large skillet, heat oil.
  2. Pour eggs into hot skillet and cook slowly over low heat.
  3. When eggs are almost dry, turn egg sheet over and cook a few more seconds.
  4. Remove from skillet.
  5. Cool; cut into thin strips.
  6. Fry bacon in skillet until almost crisp.
  7. Pour out all but 2 tablespoons drippings from skillet.
  8. Add char siu and cook for about 2 minutes.
  9. Stir in cooked rice, onions, oyster sauce, shoyu, pepper, and egg, mixing well.
  10. Sprinkle with Chinese parsley.

Serves 6.

Tip: The key to making tasty fried rice is using day-old rice which helps gives it a good texture.
