Chicken or Squid Luau

Ingredients:

Chicken or Squid Luau

  • 2 pounds frozen luau leaves, thawed
  • 2 cups coconut milk
  • 1 teaspoon salt
  • 2 pounds cooked chicken or squid

Directions:

  1. In a saucepan, combine all ingredients; heat, but do not boil.

Makes 6 servings.

To prepare chicken for luau:

  1. Cut 2 lb boneless chicken into small pieces.
  2. Saute in 2 tablespoons butter or margarine.
  3. Cover and simmer 15 to 20 minutes.

To prepare squid for luau:

  1. Cut 1 1/2 lb cooked squid or octopus into thin crosswise slices.
