Chicken with Green Papaya and Green Pepper Leaves

Ingredients:

Chicken with Green Papaya and Green Pepper Leaves

  • 2 lb chicken drumettes
  • 1 1/2 teaspoons salt
  • 2 tablespoons salad oil
  • 2 teaspoons slivered ginger root
  • 3 cloves garlic, chopped
  • 1 small onion, sliced
  • 2 cans (14 1/2 oz size) chicken broth
  • 1 teaspoon patis (clear fish sauce)
  • 1 green papaya, pared and cubed
  • 2 cups green sweet pepper leaves

Directions:

  1. Rinse chicken; drain well.
  2. Sprinkle with 1 teaspoon of the salt.
  3. In a large saucepot, heat oil.
  4. Sauté ginger and garlic.
  5. Add onion; sauté for 1 minute.
  6. Add chicken; sauté for 3 more minutes.
  7. Add chicken broth, cover and simmer for 30 minutes or until chicken is tender.
  8. Season with patis and the remaining 1/2 teaspoon salt.
  9. Add green papaya; cook for 5 minutes or until tender.
  10. Add green pepper leaves; cook until leaves are wilted.

Makes 6 servings.
