Chinese Almond Cookies

Ingredients:

Chinese Almond Cookies

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons almond extract
  • 3 cups all-purpose flour, sifted
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Red food coloring

Directions:

  1. Heat oven to 325°F.
  2. Line 2 cookie sheets with parchment paper.
  3. In a large bowl, beat butter, sugar, egg and almond extract until mixture is lumpy.
  4. Add flour, baking soda and salt and mix well.
  5. Form and roll dough into 1-inch balls and place on cookie sheets.
  6. Lightly flatten the ball.
  7. Put a few drops of food coloring in a shallow dish.
  8. Dip end of a chopstick into food coloring and stamp a red dot in the center of each cookie ball.
  9. Bake for 15 minutes.
  10. Cool.

Makes 60 cookies.
