Chunky Chuck Roast Barbeque

Ingredients:

Chunky Chuck Roast Barbeque

  • 3 pounds chuck roast, cut into 1 1/2-inch chunks
  • 2 teaspoons salt and pepper mixture (adjust to taste)
  • 1/4 cup flour
  • 1 large round white onion, cut into chunks and separated

Sauce:

  • 3/4 cup ketchup
  • 6 tablespoons low-sodium shoyu
  • 1/2 cup water
  • 1/2 cup local honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 5 cloves garlic, minced

Directions:

  1. Coat meat in flour and salt and pepper mixture; set aside.
  2. In a small bowl, mix sauce ingredients.
  3. Pour approximately 1/2 cup of sauce on bottom of baking pan.
  4. Place meat and onions on top of sauce, top with remaining sauce.
  5. Cover and bake at 350°F for approximately 2 1/2 hours or until meat is tender.

Makes 8 servings.
