Clams with Black Beans

Ingredients:

Clams with Black Beans

  • 2 lb clams
  • 2 tablespoons salad oil
  • 1 tablespoon minced garlic
  • 2 tablespoons dau see (Chinese salted black soy beans), rinsed and chopped
  • 1/2 cup chicken broth
  • 1 tablespoon oyster sauce (Chinese oyster-flavored sauce)
  • 1 tablespoon sugar
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • 1/2 cup chopped green onions
  • Chinese parsley (cilantro)

Directions:

  1. Thoroughly wash clams; drain.
  2. In a wok or skillet, heat the salad oil; brown garlic.
  3. Stir in black beans.
  4. Add clams and stir-fry for 1 minute.
  5. Add broth, oyster sauce, sugar, soy sauce, and sesame oil; cover and cook for about 1 minute.
  6. Combine cornstarch and water.
  7. When clams are open, thicken sauce with cornstarch mixture.
  8. Add green onions before serving.
  9. Garnish with Chinese parsley.

Makes 4 servings.
