Cornmeal Muffins

Ingredients:

Cornmeal Muffins

  • 2 cups buttermilk baking mix
  • 3 tablespoons yellow cornmeal
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 cup salad oil
  • 3/4 cup milk
  • 1 egg

Directions:

  1. Preheat electric oven to 400°F.
  2. Place liners in muffin pans.
  3. In a bowl, combine dry ingredients.
  4. Combine oil, milk, and egg; stir into dry mixture; do not overmix.
  5. Spoon into prepared muffin pans, filling cups 2/3 full.
  6. Bake for 15 to 20 minutes, or until golden brown.

Makes 12 to 15 muffins.
