Crabmeat Tofu Patties

Ingredients:

Crabmeat Tofu Patties

  • 1 (8-ounce) package imitation crabmeat
  • 1 (20-ounce) block firm tofu, drained
  • 2 (5-ounce) cans tuna, drained
  • 4 large shiitake mushrooms, soaked and diced
  • 1 medium carrot, grated
  • 4 stalks green onion, chopped
  • 2 large eggs
  • 1 (8-ounce) can water chestnuts, chopped
  • 2 tablespoons sugar
  • 2 1/2 tablespoons shoyu
  • Panko or flour for coating
  • Vegetable oil for frying

Directions:

  1. In a large bowl, shred crabmeat, mash tofu, add remaining ingredients, except the panko and oil; mix together.
  2. Form into patties and coat with panko.
  3. Fry until lightly browned.

Serves 6.

Tip: A cheese cloth is helpful to squeeze as much water out of the tofu before mixing or else the patties will be too moist and difficult to hold together.
