Cranberry-Orange Muffins

Cranberry-Orange Muffins

Ingredients:

Cranberry-Orange Mold

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup skim milk
  • 1/4 cup salad oil
  • 1 teaspoon grated orange rind
  • 1 egg, slightly beaten
  • 1 cup fresh or frozen cranberries, coarsely chopped

Directions:

  1. Preheat electric oven to 400°F.
  2. Spray muffin pans with non-stick cooking spray.
  3. In a bowl, combine flour, sugar, baking powder, and salt.
  4. Combine milk, oil, orange rind, and egg.
  5. Stir into flour mixture; do not overbeat.
  6. Gently fold in cranberries.
  7. Spoon into prepared pans.
  8. Bake for 25 minutes or until golden brown.

Makes 12 muffins.
