Creamy Apple Butter

Ingredients:

Creamy Apple Butter

  • 6 medium red delicious apples, peeled, seeded, and thinly sliced (or any tart apple)
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract

Directions:

  1. In a large pot, combine all ingredients.
  2. Mix ingredients well.
  3. Cover and cook on medium heat for 20 minutes; stir occasionally.
  4. Bring to boil, reduce heat to medium-low and cook another 15-20 minutes or until apples are soft enough to mash with a fork.
  5. Puree mixture with an immersion blender until desired texture. Avoid over blending to prevent mixture from becoming watery.
  6. Enjoy on toast or over ice cream.

Makes about 4 cups.
