Crispy Gau Gee

Ingredients:

Crispy Gau Gee

  • 4 large dried shiitake mushrooms, soaked in warm water, stems removed and finely chopped
  • 1 pound ground pork
  • 3/4 cup bamboo shoots, chopped
  • 1/4 cup canned water chestnuts, chopped
  • 3 tablespoons green onion, finely chopped
  • 2 tablespoons Chinese parsley, chopped
  • 1/2 teaspoon salt
  • 2 teaspoons oyster sauce
  • 3/4 cup frozen miniature shrimp, defrosted
  • 1 package fresh wonton wrappers
  • Vegetable oil for frying

Directions:

  1. Combine all the ingredients in a large bowl except the wrappers and oil.
  2. Place a tablespoon of meat mixture on one half of each square of wrapper; fold over other half and seal the edges with water.
  3. Fry in hot oil at 375°F until golden brown (1-2 minutes on each side).

Makes 4 dozen.
