Crispy Ranch Chicken

Ingredients:

Crispy Ranch Chicken

  • Non-stick cooking spray
  • 2 cups crispy rice cereal
  • 1/2 cup grated parmesan cheese
  • 1 packet (1 ounce) ranch salad dressing mix
  • 2 eggs whites, beaten
  • 8 boneless skinless chicken thighs

Directions:

  1. Heat oven to 350°F.
  2. Coat a baking sheet with cooking spray.
  3. In a mixing bowl, combine rice cereal, parmesan and ranch mix and set aside.
  4. In a medium bowl, add egg whites.
  5. Dip chicken in egg whites, then in the cereal mixture to coat evenly.
  6. Arrange chicken thighs on prepared baking sheet.
  7. Bake for 25 minutes or until chicken is golden brown.
  8. Serve hot with fresh carrot sticks and cucumber slices.
