Curry Leaf and Meyer Lemon Rice Pilaf

Ingredients:

Curry Leaf and Meyer Lemon Rice Pilaf

  • 1 Meyer lemon
  • 1 tablespoon coconut oil
  • 1 teaspoon mustard seeds
  • 5 (2-inch) cinnamon sticks
  • 4 cardamom pods
  • 25 curry leaves
  • Salt and pepper to taste
  • 2 3/4 cups water
  • 2 cups basmati rice, rinsed and drained
  • 1/4 cup unsalted butter

Directions:

  1. Preheat oven to 400°F.
  2. Spread rice evenly in a 9 x 13-inch baking pan; set aside.
  3. Using a vegetable peeler, remove Meyer lemon zest in large strips.
  4. Cut lemon in half and reserve 1 tablespoon of juice; set aside.
  5. In a large sauce pan, heat coconut oil over medium-high.
  6. Add mustard seeds and cook until seeds begin to pop, about 3 minutes.
  7. Add cinnamon, cardamom, curry leaves, and salt and pepper.
  8. Add water and bring to a boil.
  9. Once boiling, carefully pour over rice.
  10. Add lemon zest and cover with foil.
  11. Cook in oven for 25 minutes; remove and let sit covered for 8-10 minutes.
  12. Remove and discard the cinnamon, sticks, curry leaves, and lemon zest.
  13. Before serving, melt butter in a small pan.
  14. When butter begins to bubble add lemon juice.
  15. Swirl together and pour over rice.
  16. Use a fork to toss.
