Dau Lau

Ingredients:

Dau Lau

  • 1 cup shredded coconut
  • 1 cup finely chopped roasted peanuts
  • 1 tablespoon brown sugar
  • 1 lb no mei fun or mochiko (glutinous rice flour)
  • 1 3/4 cups water

Directions:

  1. Combine coconut, peanuts, and sugar; mix well.
  2. In a bowl, combine flour and water, adding only enough water to make a stiff dough.
  3. Roll dough into 1-inch balls.
  4. In a saucepot, bring water to a boil.
  5. Drop 6 to 8 balls into boiling water.
  6. Cook until dough floats to the surface, about 3 minutes; remove and roll in coconut mixture.
  7. Repeat until all dough is cooked and coated.

Makes about 5 dozen.
