- Place chicken in medium bowl.
- Pour teriyaki glaze on chicken.
- Cover bowl with plastic wrap and marinate in refrigerator for one hour.
- Spray grill rack with non-stick cooking spray and set heat to high.
- Thread 6 chicken pieces onto each skewer.
- Grill chicken for 8-10 minutes, turning skewers over halfway through.
- Remove skewers from grill.
- Place prepared pad Thai noodles on a plate, then chicken on top.
- Sprinkle half of crushed Do-si-dos cookies on chicken.
- Mix remaining Do-si-dos cookie crumbs with peanut sauce.
- Pour peanut sauce over chicken and noodles or serve as a side dipping sauce.

Tip: Soak skewers in ice-cold water for 15 minutes to prevent them from burning.
