Earthy Crunchy Salad

Ingredients:

Earthy Crunchy Salad

  • 2 cups chopped kale
  • 2 cups baby spinach
  • 2 cups chopped romaine lettuce
  • 2 cups shredded carrots
  • 1 cup baby arugula (optional)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1 medium cucumber, diced
  • 1 cup raisins or cranberries (optional)
  • 1 cup crispy won tons (optional)

Directions:

  1. In a large bowl, combine and mix kale, spinach, romaine lettuce, carrots, and arugula.
  2. Evenly pour extra virgin olive oil and lemon juice over ingredients.
  3. Add in salt and pepper, cucumbers, raisins and won tons.
  4. Toss all ingredients until the olive oil is evenly distributed. Enjoy with a protein, such as chicken breast or tofu.

Serves 4.
