Easy Chicken Luau
- 5 lb chicken thighs
- 1 lb frozen spinach, thawed and drained
- 1 1/2 cups skim milk
- 1/4 teaspoon coconut extract
- 1 can cream of chicken soup (or reduced fat/sodium)
