English Muffins with Curried Cheese Topping

Ingredients:

English Muffins with Curried Cheese Topping

  • 6 English muffins
  • 3/4 cup mayonnaise
  • 1 tablespoon curry powder
  • 1/4 cup minced green onions
  • 1 can (2 1/2 ounces) chopped ripe olives
  • 4 cups shredded sharp cheddar cheese

Directions:

  1. Split English muffins.
  2. In a medium bowl, combine mayonnaise and curry powder.
  3. Stir in remaining ingredients.
  4. Lightly toast English muffins.
  5. Spread with cheese mixture and broil in electric oven or toaster oven until topping is hot and bubbly.

Makes 6 servings.

I've been making this recipe for 20 years. The only difference in my recipe is I cut each English muffin half into 6ths after spreading on the curry mix. I've actually made these in advance and frozen them on a cookie sheet, then put in a freezer container til I need some. These are great appetizers. I used to take them to work and everyone, and I mean everyone, would devour them. I've heated small amounts in my toaster over and put some in the microwave. Once you taste these, you won't be able to stop eating them. I hope you'll try this recipe. You'll be glad you did.
