Finnish Beef Soup

Ingredients:

Finnish Beef Soup

  • 1 pound ground beef
  • 1 large onion, diced
  • 4 stalks celery, chopped
  • 3 carrots, cubed
  • 2 potatoes, cubed
  • 1 package (9 ounces) prepared vegetable soup mix
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon pepper
  • 8 cups water

Directions:

  1. In medium-size pot, brown ground beef and drain some of the fat.
  2. Add remaining ingredients and cook for 15 min or until vegetables are tender.
  3. May substitute with vegetables of your choice.

Makes 8 servings.

300 calories, 6 g fat, 2.5 g saturated fat, 35 mg cholesterol, 500 mg sodium, 41 g carbohydrate, 7 g fiber, 5 g sugar, 20 g protein
