Firecracker Noodle Salad with Pineapple-Ginger Dressing
Salad:
- 1 head romaine, chopped
- 2 cups cooked soba (buckwheat) noodles
- 1 cup shredded carrot
- 1 cup shredded daikon (white radish)
- 1 Japanese cucumber, julienne
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup shredded red cabbage
Pineapple-Ginger Dressing:
- 1 cup rice vinegar
- 1 cup crushed pineapple
- 1/4 cup light soy sauce
- 1/4 cup turbinado or brown sugar
- 1/2 cup diced tomato
- 1/4 cup minced yellow bell pepper
- 2 tablespoons minced red onion
- 1 1/2 teaspoons grated ginger root
- 1 1/2 teaspoons dried tarragon leaves
- White pepper to taste
