Garlic Chicken Bites with Tomato Raisin Sauce

Ingredients:

Garlic Chicken Bites with Tomato Raisin Sauce

  • 3 tablespoons minced cilantro (Chinese parsley)
  • 2 teaspoons coarsely ground pepper
  • 8 cloves garlic, peeled and minced
  • 1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch chunks
  • 1/3 cup tomato sauce
  • 1 tablespoon firmly packed brown sugar
  • 1 tablespoon distilled white or cider vinegar
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 500°F.
  2. Lightly grease a 10 x 15-inch rimmed baking sheet.
  3. Mix cilantro, pepper, and 6 cloves of the garlic, and rub over chicken.
  4. Place chicken pieces well apart onto prepared baking sheet.
  5. Bake until chicken is lightly browned and no longer pink in the center (about 18 to 20 minutes).
  6. Meanwhile, in food processor or blender, whirl the remaining 2 cloves of garlic, tomato sauce, sugar, vinegar, and raisins until the raisins are chopped.
  7. Serve chicken hot with tomato raisin sauce.

Makes about 4 servings.
