Green Soup (Caldo Verde)
- 8 potatoes, pared and cubed
- 1 lb Portuguese sausage
- 6 cups water
- Salt to taste
- 2 tablespoons olive oil
- 2 bunches collard greens, large veins removed and leaves shredded
