Hawaiian Pie Company’s “Poi Pecan Pie”

Ingredients:

Hawaiian Pie Company’s “Poi Pecan Pie”

  • 1 cup fresh poi
  • 3 eggs
  • 2/3 cup sugar
  • 1 cup light corn syrup
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 2 tablespoons cream
  • 1 cup pecan pieces, ground
  • 1 cup pecan halves
  • 1 unbaked 9-inch pie shell

Directions:

  1. Heat oven to 350°F.
  2. In a large bowl, mix poi, eggs, sugar, corn syrup, butter, vanilla and cream.
  3. Mix well and add ground pecan pieces to mixture.
  4. Pour mixture into pie crust then evenly distribute pieces of pecan halves into pie.
  5. Place on a cookie sheet and bake for 30-40 minutes.
  6. Cool completely before serving.

Serves 8.
