I'a (Fish) Laulau

Ingredients:

Ia (Fish) Laulau

  • 10 uala (sweet potato) leaves
  • 3 ounces boneless ia (fish)
  • Inamona (ground, roasted kukui nuts) and paakai (salt) to taste
  • Ti leaves for wrapping

Directions:

  1. Peel the stems off the sweet potato leaves and lay flat.
  2. Season ia with inamona and paakai; place ia in the center of uala leaves and wrap uala leaves around the ia.
  3. Wrap with ti leaves and steam for about 30 minutes.

Makes 1 serving.
