Island Style Chicken Salad

Ingredients:

Island Style Chicken Salad

  • 1 1/2 cup cooked or canned chicken breast, chopped
  • 1/4 cup apples, diced
  • 1/4 cup walnuts, chopped
  • 1/4 cup celery, chopped (optional)
  • 1/4 cup raisins, finely chopped
  • 1/4 cup mayonnaise
  • 1 teaspoon papaya seed salad dressing

Directions:

  1. Combine chicken, apples, walnuts, celery, and raisins in blender, pulse ingredients until preferred consistency.
  2. Next, place ingredients in mixing bowl, stir in mayonnaise and papaya seed salad dressing.
  3. Serve on bed of local greens such as Manoa lettuce, or desired bread.

Serves 2-4.
