Island Surprise Fish Saute
- 3 tablespoons olive or avocado oil
- 1 small Maui or Ewa sweet onion
- 2 ripe mango and/or papaya, diced
- 2 teaspoons brown sugar
- 2 pounds fresh local fish filets of choice (firm white fish)
- 1 tablespoon fresh chopped Chinese parsley
- Garlic salt to taste
- 2 tablespoons chopped macadamia nuts
- Shredded coconut as garnish (optional)
