- In a colander, rinse rice.
- Place in a pot with 6 cups of water, over medium-heat.
- Bring to a boil to parboil.
- Transfer rice into a colander and rinse under cold water.
- Let drain.
- In a blender, combine all ingredients except the remaining rice, water and olive oil.
- Once blended stir in oil.
- In a large pot place mixture, rice, remaining water.
- Cover and let cook over medium heat for 45 minutes, stirring every 15 minutes or until rice is tender and liquid is absorbed.
- Turn off heat and let steam for 5 minutes.
- Fluff with fork and serve.
