Jollof Rice (Nigerian Rice Dish)

Ingredients:

Jollof Rice (Nigerian Rice Dish)

  • 3 cups basmati rice
  • 10 cups water, divided
  • 1 cup pureed tomatoes
  • 3 tablespoons tomato paste
  • 1/2 Ewa sweet onion, sliced
  • 3 large red bell peppers, seeded and sliced
  • 3 cloves garlic
  • 6 chicken bouillon cubes
  • 1 bunch thyme, stems removed
  • 1 teaspoon white pepper
  • 4 teaspoons olive oil

Directions:

  1. In a colander, rinse rice.
  2. Place in a pot with 6 cups of water, over medium-heat.
  3. Bring to a boil to parboil.
  4. Transfer rice into a colander and rinse under cold water.
  5. Let drain.
  6. In a blender, combine all ingredients except the remaining rice, water and olive oil.
  7. Once blended stir in oil.
  8. In a large pot place mixture, rice, remaining water.
  9. Cover and let cook over medium heat for 45 minutes, stirring every 15 minutes or until rice is tender and liquid is absorbed.
  10. Turn off heat and let steam for 5 minutes.
  11. Fluff with fork and serve.

Makes 9 servings.
