Kalua Pig Fritatta with Carmelized Onions

Ingredients:

Kalua Pig Fritatta with Carmelized Onions

  • 3 tablespoons coconut oil, divided
  • 1 large sweet local onion, thinly sliced
  • 1 red bell pepper, diced
  • 2 cups prepared kalua pig, shredded
  • 8 local eggs, whisked
  • 2 tablespoons half-and-half
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 325°F.
  2. In large skillet over medium-low heat, add 2 tablespoons coconut oil and onion; caramelize onion until golden brown (about 10-15 minutes); remove from pan and set aside.
  3. In same pan, add 1 tablespoon coconut oil and bell pepper.
  4. Cook until soft; mix in pork and onions.
  5. Whisk together eggs and half-and-half, then pour over pork mixture.
  6. Season with salt and pepper.
  7. Bake for 30 minutes.
  8. Let rest for 5 minutes before serving.

Makes 8 servings.
