Lavadores (Portuguese Washboard Cookies)

Ingredients:

Lavadores (Portuguese Washboard Cookies)

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar, divided
  • 4 eggs
  • Zest of 1 lemon
  • 4 cups flour
  • 1 tablespoon baking powder

Directions:

  1. Preheat oven to 350°F.
  2. Line cookie sheets with parchment paper.
  3. Using an electric mixer, cream butter and 1 cup of sugar for about 1 minute.
  4. Beat in eggs, one at a time, blending well after each, until batter is fluffy and pale yellow, about 2-3 minutes.
  5. Stir in grated lemon peel.
  6. In a medium bowl, whisk together flour and baking powder.
  7. Using a wooden spoon, fold flour into egg batter.
  8. Mix well.
  9. Gently knead dough in bowl for about 5 minutes.
  10. Place remaining 1/2 cup sugar in a shallow dish.
  11. Shape pieces of dough into 1 1/2 inch balls.
  12. Roll in sugar and place on cookie sheets, 2 inches apart.
  13. Flatten gently with tines of a fork to make horizontal lines.
  14. Bake for 20 minutes or until a light golden color.

Makes 30 cookies.
