Leche Flan

Ingredients:

Leche Flan

  • 1 cup brown sugar
  • 1/4 cup water
  • 1 can (15 ounce) sweetened condensed milk
  • 3/4 cup milk
  • 12 egg yolks
  • 2 tablespoons grated lime rind
  • 2 tablespoons lime juice

Directions:

  1. Fill a 13 x 9 x 2-inch pan with water to a depth of 1/2-inch; place in oven.
  2. Preheat electric oven to 300°F.
  3. In a saucepan, combine sugar and water.
  4. Cook over medium heat, stirring constantly, until sugar is caramelized.
  5. Quickly pour into an 8-inch square pan; tilt pan to evenly coat bottom and sides.
  6. Cool slightly.
  7. Combine remaining ingredients; mix well.
  8. Pour over caramel layer; place in pan of hot water in oven.
  9. Bake for 1 hour or until a knife inserted in the center of the custard comes out clean; chill.
  10. Loosen edges with a knife; invert onto a serving dish.
  11. Cut into serving pieces; spoon excess syrup on each portion.

Makes 12 servings.
