Li Hing Animal Crackers

Ingredients:

Li Hing Animal Crackers

Glaze:

  • 1 cup butter
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon li hing powder
  • Non-stick cooking spray
  • 1 (32-ounce) bag animal crackers

Directions:

  1. Heat oven to 250°F.
  2. Spray a foil baking pan with non-stick spray.
  3. In a small saucepan on low-medium heat, melt butter and sugar; it should not be bubbling.
  4. Add lemon juice and li hing powder.
  5. Pour crackers into foil pan.
  6. Pour glaze over crackers and gently toss until evenly coated.
  7. Bake for 1 hour, gently tossing the crackers at 15-minute intervals.
  8. Cool and store in an airtight container.

Tip: To prevent crackers from sticking together, remove from oven and place in front of a fan, tossing the crackers to cool quickly.

140 calories, 6 g total fat, 3.5 g saturated fat, 10 mg cholesterol, 100 mg sodium, 21 g carbohydrate, no fiber, 9 g sugar, 1 g protein.
