Lilikoi Malasadas with Guava Coulis and Ice Cream
Malasadas:
- 3 cups bread flour
- 1/4 cup sugar
- 1 tablespoon + 1/2 teaspoon dry yeast
- 7 eggs
- 2 teaspoons salt
- 1 1/2 cups butter, softened to room temperature
- Vegetable oil for deep frying
- Sugar
Lilikoi Curd:
- 1 cup sugar
- 1/2 cup butter
- Juice of 1/2 lemon (about 1 1/2 tablespoons)
- 1/4 cup unsweetened lilikoi (passion fruit) concentrate
- 6 egg yolks, beaten
Guava Coulis:
- 1 cup unsweetened guava concentrate
- 1 cup sugar
- 1 cup water
