Lomi Ahi on Sushi Rice (Compliments of Tanioka's Seafood and Catering)

Ingredients:

Lomi Ahi on Sushi Rice

  • 2 teaspoons shoyu
  • 1/2 teaspoon ground chili pepper or more to taste
  • 1/2 teaspoon wasabi paste (S&B brand if available)
  • Pinch of sea salt
  • 2 pounds ahi or aku, finely chopped
  • 4 cups cooked rice or sushi rice

For garnish:

  • 1/4 cup finely sliced Maui onion
  • 1/4 cup finely sliced green onion
  • 1/4 cup shredded nori
  • 1/4 cup salmon roe (optional)
  • 1/4 tobiko (flying fish roe) (optional)

Directions:

  1. In a small bowl, mix the shoyu, chili pepper, wasabi, and salt; pour mixture over the fish and mix gently, but well.
  2. Spread the rice onto a serving platter.
  3. Place the ahi in little mounds all over the rice.
  4. Sprinkle with Maui onion, green onion, and shredded nori.
  5. Sprinkle with salmon roe and tobiko if desired.

Makes 6 servings.
