- Preheat oven to 400°F.
- Line baking sheet with parchment paper.
- Season both sides of fillet with pepper and lime zest, lightly pressing zest into fillet.
- Place fish on baking sheet.
- Place in center rack of oven and bake for 18-20 minutes or until fish is cooked.
- While fish is baking, in a medium bowl, combine pineapple, dragon fruit, and cilantro.
- Top pineapple mixture on fish during last 5 minutes of cooking.
- Topping also can be used as a garnish.
