Mango Relish
- 1 large ripe mango, peeled, seeded and diced into 1/2-inch cubes
- 1 teaspoon extra virgin olive oil
- 1/2 red bell pepper, seeded and chopped
- 1 tablespoon thinly sliced green onions
- 1 tablespoon chopped Chinese parsley
- Juice of 1 lime
- 1/4 teaspoon kosher salt
- 1 pinch black pepper
- 1 teaspoon honey
