Marlin (Nairagi) Burger

Ingredients:

Marlin (Nairagi) Burger

  • 1 1/2 pounds fresh marlin
  • 1 lime, zested and juiced (about 2 tablespoons of zest and juice)
  • 1 tablespoon Dijon mustard
  • 2 teaspoon hot sauce (such as Tabasco)
  • 1/4 cup dill weed
  • 1/2 cup diced onions
  • 1 tablespoon chopped garlic
  • 1/2 cup mayonnaise
  • 1/2 cup olive oil
  • 1 lemon, zested and juiced (about 2 tablespoons of zest and juice)
  • Kosher salt and ground white pepper to taste
  • 4 hamburger buns, toasted
  • Lettuce, tomato, red onion for toppings (optional)

Directions:

  1. In a food processor, grind fish then transfer to a large mixing bowl.
  2. Add the remaining ingredients except the hamburger buns and toppings and mix by hand.
  3. Form into 4 patties.
  4. In a non-stick pan, pan sear patties on medium-high for 1 to 2 minutes on each side; cook until medium rare.
  5. Do not overcook.
  6. Serve with hamburger buns and optional toppings.
