Mexican Chicken Stew

Ingredients:

Mexican Chicken Stew

  • 4 tablespoons olive oil
  • 1 medium onion, roughly chopped
  • 4 cloves garlic, roughly chopped
  • 2 jalapenos, seeded and sliced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried cumin
  • 1 (28-ounce) can chopped tomatoes
  • 3 cups shredded cooked chicken
  • Few dashes Worcestershire sauce
  • 4 cups chicken stock
  • 1 Tahitian lime
  • 1 cup cooked white rice
  • Kosher salt
  • Optional garnishes: sour cream, fresh Chinese parsley, diced avocado

Directions:

  1. In a large pot, heat oil over medium heat.
  2. Add onion and saute for 1-2 minutes.
  3. Add garlic and jalapeno and cook until soft and translucent.
  4. Add spices and cook for 1-2 minutes until fragrant and aromatic.
  5. Add tomatoes, chicken, Worcestershire, and stock.
  6. Bring to a simmer and cook 20 minutes.
  7. Cut lime in half, squeeze juice into pot, and then add juiced halves as well.
  8. Add white rice and cook 5 minutes longer to warm rice through.
  9. Season, to taste, with salt.
  10. Ladle into bowls and top with optional garnishes.
