Minari Kook (Watercress Soup)

Ingredients:

Minari Kook (Watercress Soup)

  • 2 bunches watercress
  • 1 1/2 lb lean pork
  • 1 tablespoon sesame oil
  • 8 cups boiling water
  • 1 tablespoon salt
  • 3 eggs, slightly beaten

Directions:

  1. Wash watercress and break into 2-inch pieces.
  2. Thinly slice pork.
  3. Heat oil in a large saucepan.
  4. Add water and bring to a full rolling boil.
  5. Add pork and simmer 10 minutes.
  6. Stir in salt.
  7. Add watercress and bring again to a boil.
  8. Turn off heat and stir in eggs.
  9. Let stand 1 minute before serving.

Makes 6 servings.
