Mini Meat Loaves

Ingredients:

Mini Meat Loaves

  • 3 slices soft bread
  • 1 cup evaporated milk
  • 1 egg
  • 1/4 cup minced onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon ground sage (optional)
  • 1/4 teaspoon celery salt (optional)
  • 1/4 teaspoon garlic salt
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 lb ground beef
  • 1/2 lb pork sausage

Directions:

  1. Tear bread into crumbs in large mixing bowl.
  2. Add remaining ingredients except ground beef and sausage.
  3. Mix well, let sit for about 10 minutes, allowing bread to absorb the liquid and soften.
  4. Use a fork to break the bread into finer pieces.
  5. Add ground beef and sausage, mix thoroughly, but do not over mix, as over-handling will cause the meatloaf to become tough.
  6. Form six individual loaves, 1-inch thick.
  7. Bake until done* (an instant read thermometer should read 165 degrees, the meatloaf should not be pink in center, and the juices should have no pink color).

Makes 6 servings.

If using the Panasonic Flash Express toaster oven, bake meat loaves at 355°F for about 30 minutes.
If using a conventional full-size oven, bake meatloaves at 350°F for about 35 to 40 minutes.
If using a conventional toaster oven, bake meatloaves at 350°F for about 45 minutes.
