- In a large saucepan, bring water to a boil.
- Add shrimp, cover, and simmer 30 minutes.
- Pare dasheen; cut into 1/4-inch slices.
- Pare daikon; cut into thin strips.
- Add dasheen and matsutake to stock; simmer 10 minutes.
- Add daikon and simmer 10 more minutes.
- Strain; stir in miso.
- Cut mizuna into 1 1/2-inch pieces.
- Add mizuna and mochi to stock.
- Heat and serve immediately.
