Miso Ozoni (Japanese New Year's Soup)

Ingredients:

Miso Ozoni (Japanese New Year's Soup)

  • 8 cups water
  • 1/2 cup dried shrimp
  • 6 dasheen (taro)
  • 1 medium daikon (white radish)
  • 2 matsutake (long stemmed mushrooms), thinly sliced
  • 3/4 cup miso (Japanese fermented soybean paste)
  • 1/2 bunch mizuna (Japanese cabbage)
  • 6 mochi (Japanese glutinous rice cake)

Directions:

  1. In a large saucepan, bring water to a boil.
  2. Add shrimp, cover, and simmer 30 minutes.
  3. Pare dasheen; cut into 1/4-inch slices.
  4. Pare daikon; cut into thin strips.
  5. Add dasheen and matsutake to stock; simmer 10 minutes.
  6. Add daikon and simmer 10 more minutes.
  7. Strain; stir in miso.
  8. Cut mizuna into 1 1/2-inch pieces.
  9. Add mizuna and mochi to stock.
  10. Heat and serve immediately.

Makes 6 servings.
