Moku's Simple Beef Stew

Ingredients:

Moku’s Simple Beef Stew

  • 2 tablespoons olive oil
  • 6 pounds stew meat
  • 1 1/2 tablespoons Hawaiian salt
  • 3 large onions, chopped
  • 4-6 stalks celery, chopped
  • 8-10 cups water
  • 4-6 bay leaves
  • 1 beef bouillon cube
  • 1 (8-ounce) can tomato sauce
  • 4 large carrots, chopped into 1-inch pieces
  • 2 large potatoes, chopped
  • 5 tablespoons each corn starch and water to make a slurry

Directions:

  1. In a large pot, heat oil on medium-high heat; add meat and Hawaiian salt and brown on all sides.
  2. Add onions and celery and brown, about 5-7 minutes.
  3. Add water, bay leaves, bouillon cube and tomato sauce; increase heat and bring to a rapid boil; lower heat and boil until meat is fork-soft, about 2 hours.
  4. Skim fat and adjust seasonings if needed.
  5. Add carrots and cook for about 10-15 minutes; add potatoes and cook for about 10-15 minutes; add slurry to thicken as desired.
  6. Serve with rice and macaroni salad.

Serves 12.
